or who doesn’t like pizza? is more like it. Brian Snider has created this wonderful video of Jack Redins  and Knox creating a fantastic 10″ deep dish
pizza. The recipe is below the video…enjoy and don’t forget to thank Knox with a piece of pepperoni.

Dough

3 cups flour, 1/2 cup corn oil, 1 1/8 cup water,  2 tsp yeast, 1 1/4 tsp sugar, Pinch of salt

Toppings

2 cloves garlic, 2 jalapeno peppers, Cherry tomatoes, Mushrooms, Dried pepperoni, Fresh basil, Wine vinegar, pinch of salt, Mozzarella cheese

The How To:

Mix the yeast, sugar and warm water (100°F) wait approx 20 min for the yeast to activate. While your waiting cut the cherry tomatoes in half, de-seed the 2 jalapenos and chop up into small pieces. Chop up the basil and the garlic. Mix these ingredients together and sprinkle with a small amount of wine vinegar and salt. I promise this is nowhere near as hot as it sounds, in fact you might notice only a tiny bit of heat. Chop up the mushrooms in a separate pile. Put the flour and a pinch of salt in a large bowl. Add in the oil and activated yeast. Mix well and knead into a ball. Cover bowl with a towel and place in a warm area. After 20 minutes dough will have raised. Punch down dough and flatten into greased pan. Add the garlic tomato jalapeno basil vinegar mixture and spread evenly on dough. Cover this with mushrooms. Cover this with pepperoni. Cover this with mozzarella cheese. Place in pre-heated oven 550 Fahrenheit. When crust is golden to dark brown pizza is ready

Don’t forget to give Knox a piece of pepperoni!

This dough is versatile! You can use this dough for 2 medium pizzas, one large pizza or 4 four thin crust pizzas
